I have, and have always had, this thing for lists. There is something so cathartic about listing out whatever little this or that is on your mind. Need to schedule out the rest of your day? Make a list. Grocery trip? Make a list. Daydreaming about a vacation? Make a list. Lists can be as much an outlet as they are a useful tool. And I love them.
So when my favorite site for planners, Erin Condren, relaunched their simple but awesome notebooks, I was ALL OVER those little potential list containing pages. I decided to buy two. One to keep and one to giveaway.
At this point, I should say, this is NOT a sponsored ad. Nope. I just like these little notebooks. I really utilize things like this in my life and I thought it would be nice to spread the love.
So.... oh my goodness, this "pizza" is amazing. A simple, delicious, healthier pizza alternative is JUST what I needed in my life. And the whole family loved it, so WIN.
Here is how to get this into your mouth.
Ingredients:
- 1 whole grain flatbread (try to find one that is under 100 calories)
- 1 tsp of olive oil
- Cheese (I used feta and mozzarella, sparingly)
- Vegetables (I used red pepper, tomatoes, and spinach)
- Seasoning (I used black pepper, kosher salt, a roasted garlic and herb and a garlic and parsley seasoning)
Preheat the oven to 375.
You can either spread the olive oil over your flatbread using a basting brush OR drizzle it over your veggies. Artfully (or not) arrange your veggie and cheese choices on your flatbread. Sprinkle with your desired seasoning. Cook in the oven for about 10 mins (it may take less time - keep an eye on your pizza). Pull it out once the flatbread is starting to crisp up and the cheese is melted.
All that is left is to be super happy as you eat your yummy pizza. Enjoy!

Okay, y'all. It is alright to laugh at us after watching this. We had never seen these before until last Thanksgiving and apparently they are a time honored tradition elsewhere in the world. They are usually a Christmas thing and involve little paper crowns and trinkets. They are very cute and fun and I'm happy we "discovered" them all the way over here.
After having quite the time with the Thanksgiving Crackers (from World Market), we were happy to find these Easter versions at good old Target. I believe they may become a time honored tradition in he Hale House as well. =)
